You can get a hefty 500g pack of ground beef at The Meat Guy. That’s quite a bit of meat, so you can always just seal and refreeze it. However, we recommend cooking this basic ground beef mix, and storing it for future recipes. This way, the quality of the meat is maintained better than if you thaw and refreeze it raw. Use this meat to make a basic ground meat mix, then just use that for different dishes! Change up the flavor by adding your favorite spices and herbs, and you’re good to go! Here we have a quick guide to get you started!

WHAT IS 100% GRASS-FED GROUND BEEF?

100% grass-fed beef mince, as the name suggests, is beef that’s been fed only grass. We cut our rump steak, strip loin steak and ribeye steak, and mix them with the whole outside round. This makes it low in fat and rich in lean meat. This might just make the best hamburgers you’ve ever had!

THAWING

ICE WATER THAWING METHOD

This method takes a bit of time and effort, but it’s the one that we recommend the most!
Make sure to double-wrap the meat in another plastic bag to prevent any water from seeping into the packaging.
Add some ice and a bit of water in a bowl, and submerge the meat in.
Let it thaw out, and add ice as needed. It should take about 3 hours to thaw completely. (This is only an estimation. Thawing times may vary depending on the thawing conditions and room temperature, so please make sure to allow enough time for the meat to thaw.)
By keeping the surface temperature of the meat around -2 ° C, you can make sure it thaws out relatively quickly while still maintaining its quality.

NATURAL THAWING IN THE REFRIGERATOR

This method will take a bit more time than ice water thawing, but it takes significantly less effort.
Again, please make sure to double-wrap the meat in another plastic bag to prevent any water from seeping into the packaging.
Place in a tray or bowl, stick it in the fridge, and that’s it! All that’s left to do is wait.
It should take about 5 hours to completely thaw out. This is also just an estimation.
Thawing in the fridge will make sure that the difference between the center of the meat and the surface isn’t too big. This will reduce the amount of umami that will escape from the meat.

  • 1. Thaw the ground beef, and let it come back to room temperature.

  • ・cooked pasta (enough for 2 people)
  • ・250g ground beef mix (instructions above)
  • ・1 can whole tomatoes
  • ・1 tbsp consommé
  • ・30g flour
  • ・salt and pepper to taste
  • ・appropriate amount of olive oil

<DIRECTIONS>
  • 1. Heat the olive oil in a frying pan and reheat the basic ground beef mix on low heat.
  • 2. Add the flour and mix gently until everything is thoroughly mixed.
  • Crush the tomatoes and mix well
  • 3. Open the can of tomatoes and add to the pan. Crush the tomatoes and mix well.
  • 4. Add the consommé, salt & pepper, and garlic if you like. Simmer the mixture, and it’s good to go!

  • ・2-3 leaves lettuce
  • ・3 tbsp ketchup
  • ・2 tsp red miso
  • ・2 tsp Meat Guy taco spice
  • ・Olive oil

<DIRECTIONS>
  • 1. Heat the olive oil in a frying pan, and reheat the basic ground beef mix on low heat.

  • ・1 piece curry roux
  • ・100 ml tomato juice
  • ・2 eggs
  • ・appropriate amount of olive oil

<DIRECTIONS>
  • 1. Heat the olive oil in a frying pan, and reheat the basic ground beef mix on low heat.
  • 2. Add the curry roux and tomato juice and simmer until the liquid has evaporated.
  • 3. Cook 2 fried eggs.
  • 4. Serve the dry curry over a bed of rice, and top with fried egg. Enjoy!
