If you’ve ever felt like your barbecue game is stuck in a rut, you probably just need to spice up the types of meat you’re cooking! One exciting type of meat that we recommend you start incorporating into your barbecues is lamb meat!
There aren’t a lot of people in Japan who include lamb meat in their bbq menu, so you’ll definitely stand out. Here are a couple useful tips, tricks and recipes to get you started in your lamb bbq journey.

LAMB BBQ PREP TIPS & TRICKS

Lamb meat comes from sheep that are younger than a year old. Anything older than that would be called “mutton”. When compared, lamb meat stands out for its tender meat that has less of a peculiar odor than mutton. This is what makes it a popular option for those who are new to lamb meat. There’s not much that goes into preparing lamb meat before cooking.
It would really depend on the type of dish that you’ll be using it for. However, the main key to getting delicious tasting meat is in properly thawing it! Of course, you may get overwhelmed if you’ve never done this before… But don’t worry! It’s so easy! All you have to do is transfer the frozen meat from the freezer to the fridge, and wait a day or two for it to completely thaw out. SO SIMPLE!

Lamb shoulder meat has the perfect balance of meat and fat that will get you enjoying every bite! This goes great with stir-fried dishes as well as used for nabe or shabu-shabu!

LAMB CHOPS

Lamb chops come from the loin with the bones left in and chopped into individual cuts… hence, the term chops. This cut is great in boiled/stewed and grilled dishes, which makes it the perfect BBQ cut! Apart from being delicious, it’s also great for the ‘gram!

LAMB SPARERIBS

Similar to pork ribs, this cut of lamb comes from the rib part of the lamb with the bone left in. This is great in stews, as well as marinated before using for an outdoor BBQ!

LAMB T BONE STEAK

T bone is another cut that includes the bone. The T bone is the perfect cut for anyone who wants to try out both fillet and loin parts. You get the best of both worlds in this one! For this cut, it’s best to cook it as a steak to enjoy all the natural flavors!

As far as nutritional content, lamb meat is a great source of vitamin B which is necessary for boosting metabolism. It also contains vitamin E, which has antioxidant properties. But wait, there’s more! It contains an amino acid called L-carnitine, which is a nutrient that helps in burning fat!

Although lamb meat may seem like it contains a lot of fat, a lot of it is unsaturated fatty acids. This is good for those who want to improve their cholesterol levels. As you can see, this meat is a great way to maintain a healthy diet... Oh, and did we mention it’s also uber delicious? What more can you ask for!?

TIPS FOR GETTING PERFECTLY ROSE-COLORED LAMB BBQ

Just like other types of meat, lamb can get tough and difficult to eat when overcooked. As such, we recommend cooking lamb, especially T-bone and lamb chops, to medium-rare perfection! This is where the outside of the meat is nicely browned, while the inside remains slightly pink or rose-colored. This is the best way to enjoy lamb meat.

Here are a couple tips for how to get the best results during an outdoor BBQ:

1. Remove the lamb meat from the cooler box 30 mins. before cooking and let it come back to room temperature.
2. Get the fire ready at about medium heat. Place the meat on the grill and season with a bit of salt and pepper.
3. Grill the meat for about 3 mins. on each side.
4. Once both sides have a nice brown color, transfer it once to a plate. Lightly press the center of the meat to check for doneness. If you feel it pushing back on your finger, wrap it in aluminum foil and leave it for about 5 minutes to continue cooking with the residual heat. If you feel like the meat isn’t done enough, heat it for an additional 1 minute on each side before wrapping in aluminum foil.
5. Lamb meat goes great with a sweet and fruity type of sauce. Use your favorite type of jam (1 tbsp) and mix it with soy sauce (1 tsp.) to make a fruit-based sauce to serve with your freshly grilled lamb. (We used blueberry jam for the sauce in the photo.)

EASY LAMB BBQ RECIPES

GRILLED LAMB SHOULDER … SLICED LAMB “JINGISUKAN” RECIPE (FOR 2-3 PEOPLE)

      SLICED LAMB 

Prepare the ingredients: cabbage (2 leaves, cut into bite sized pieces), onions (1/2, sliced to about 5mm-thick pieces), carrots (1/6, cut into thin strips, bean sprouts (1/2 bag), sliced lamb shoulder meat (250g), oil (1 tbsp.)
Preheat the oil in a frying pan on medium heat, and start cooking the veggies for about 3 mins. Place the lamb meat on top of the vegetables, then cover the pan and wait for about 5 minutes. Check to see if the meat has cooked. If it has, serve with your favorite sauce and enjoy!

JINGISUKAN

“JINGISUKAN” is a dish that is popular in Hokkaido. It’s super simple and easy to make in a regular frying pan. You can also make this during a barbecue. Simply use an iron plate instead of a frying pan, and steam the lamb on top of the vegetables. So simple!

LAMB TONGUE AJILLO

     LAMB TONGUE AJILLO 

Prepare the ingredients: olive oil (4 tbsp), garlic (3 cloves, coarsely chopped), lamb tongue (100g), rosemary (1 sprig).
Add all the ingredients to a skillet, and start cooking on medium heat. Simmer for about 7 minutes. When the lamb tongue is cooked, sprinkle with about 2 pinches of salt and serve in a bowl.
Lamb is different than mutton in that mutton is a different tougher meat and that lamb Lamb tongue has a cross between a crunchy and soft texture close to gizzard. Once you get a taste of this, you’ll definitely be addicted to the flavor!

LAMB T BONE STEAK AND LAMB CHOP BUFFALO BBQ STYLE (FOR 2-3 PEOPLE)

     LAMB T BONE STEAK AND LAMB CHOP 

In a resealable plastic bag, place the thawed-out T-bone steak (250g) and The Meat Guy’s original BBQ sauce (100g). Let it soak for about an hour or overnight. The longer it soaks, the better the taste and stronger the flavor! Once it has soaked enough, cook it carefully over low to medium heat, making sure it doesn’t burn. When it reaches the desired doneness, you’re done! How easy is that?!
