It has almost NO FAT but it is not chewy/tough at all unlike you imagine when you talk about red-lean meat. In fact, it is really tender and juicy. It is one of the most expensive cuts. Compared to other cuts, it is a bit higher in price. Despite that, it is a very popular cut that has the best lean flavor and tenderness.

  • Q Which Part is Filet from?
    A It is a very tender part along spine of cow. The amount you can get is about 3% of one whole cow. It doesn't move much, the muscles are really thin/fine that make it very tender and juicy. The center part is called "Chateaubriand" and it is the most expensive cut.
  • Q How should I Cook it?
    A Depends on how thick it is. But first we recommend slow-cook then sear on high-heat as a finish-up. Searing it on high-heat from the beginning also works and quicker. However, it easily gets tough if you overcook it. Medium-rare is the best.

Perfect size for me
The 180g steaks are the perfect size (250g is better for 2 people I think) but they are even better when Meat Guy have this pack on sale (not often). Very very good indeed - thick cut and juicy. I little salt, pepper, and pan fry (or if you're lucky enough to have a barbeque that would work well).

Best Steak I've ever Made
1) defrost, then dry off meat, and cover with 1% of meat's weight in salt (mine was 260g so 2.6g salt). Set on plate uncovered for 24 hours in the refrigerator. 2) sous vide 2-3 hours at 53C. I use the Anova Nano but it shouldn't matter. 3) dry off again, COMPLETELY, and deep fry in lard at 190C for about 50 seconds, until brown color is perfect. Even without pepper, garlic, etc., it really tastes great, in addition to the famous tenderness. I've had the same cut at nice restaurants (e.g. Zuma) with practically no taste, so kudos to Meat Guy for sourcing some beef for us with intrinsic flavor.

Excellent larger-size tender fillet steak
The 180g and 250g filet mignon are both nice thick-cut steaks. 250g makes a good meal for two in my opinion although it depends on your appetite. This over half-pound steak is a bit too large for just me these days. Quality is excellent, the only problem is price (a few times a year it's on sale and becomes better value). Recommended accompaniment : pepper sauce, served with roast potatoes and veg. We have them for special occasions (birthdays, etc.)

Good quality, soft fillet steak
