This roasted duck is perfect for those who don’t have a lot of time to cook. It has already been pre-cooked, so all you have to do is thaw and slice. You can eat it right after thawing, or you can try out these simple tips to level up your roasted duck!

What is roasted duck?

Roasted duck is duck meat that’s been slowly roasted at a low temperature. It has already been pre-seasoned and pre-cooked, so you won’t have to go through all the trouble of making it. Simply thaw the meat, and slice! Since it’s been cooked low and slow, you’re left with a surprisingly soft and umami-filled roasted duck that’ll make you feel like you’re dining in a fancy restaurant!

This method takes a bit of time and effort, but it’s the best way to thaw frozen meat!
Wrap the meat twice in a plastic bag to avoid any leakage. Place it in a bowl and add ice and a bit of water. Add more ice as needed until the meat is completely thawed out. It will take about 1 hour for the meat to thaw. (The thawing time may vary depending on the room temperature, so please allow plenty of time for the meat to thaw.)
The key to thawing deliciously is to keep the surface temperature of the meat low! Keep it at about -2 ℃, as a general rule of thumb.

Thawing in the refrigerator

This method also takes time, but you can maintain the quality of the meat better by doing it this way.
Start by double-wrapping the meat in a plastic bag to avoid any leakage. After that, just place it in a bowl or tray and place in the refrigerator to thaw out naturally. It should be thawed out in about 3 hours. This time may also vary depending on the temperature of your fridge. By doing this method, the temperature differences between the surface and center of the meat don’t fluctuate too fast, and you can lock in the umami!.

<INGREDIENTS:GOOD FOR 2 PEOPLE>
  • ・soba (enough for 2 people)
  • ・1 stalk leeks
  • ・70g roasted duck
  • ・ample amount of oil
  • ・★4 tbsp Mentsuyu (soba noodle soup base)
  • ・★160ml water
  • ・★1/2 tsp sugar

<DIRECTIONS>
  • 1. Cut the leeks to about 3cm-long pieces.
  • 2. Heat the oil in a frying pan, and start cooking the leeks.

  • 3. When the leeks develop color, add the ingredients marked with a ★. When it starts to simmer, turn the heat off and transfer to a bowl.
  • 4. Boil water in a pot and cook the buckwheat noodles based on the cooking time on the packaging.
  • 5. When the noodles are cooked, wash with water, drain well, and serve in a platter.
  • 6. Slice the roasted duck and use as a topping for the soba noodles.

  • ・70g roasted duck
  • ・ample amount of crackers

  • 1. Slice the roasted duck meat to about 2-3mm thin slices.
