Description
This little piggy went to market. Roasting suckling pigs is originally a recipe from Spain where it's called "Cochinillo". It is usually roasted, which makes the meat super tender.
A pig roast is good fun and with these little suckling pigs, really easy. You will be the star of the neighborhood with this guy on your grill!
Serving Suggestion
Just thaw out the pig, season with whatever you have handy and score the skin to keep it from splitting. We used a charcoal barbecue for the one pictured, we loaded up the coals and one side and put the pig on the other. The hardest part was stopping everyone from trying to check on the pig every ten minutes. This one took about 3 hours and was falling off the bone tender.
