Sheep (Lamb / Mutton) is rich in flavor and nutrition which is why it is eaten world-wide. Lamb meat from baby/young sheep has mild sweet aroma which is perfect for grilling and roast. Mutton from grown sheep has depth of flavor and rich texture which is often used for stew and curry. These days, more people consider it as healthy food due to its high-protein and low-calories.
ALamb is baby sheep less than one year-old, which is tender and has less gamey-flavor/aroma. Mutton is grown sheep two year-old or older, often cooked as Jingisukan(Genghis Khan) which is marinated.
QAny Tips of enjoying Lamb / Mutton?
AMelting Point of Sheep meat is high, the fat gets really tough when it is cold. So, if it is the part with a lot of fat, eat it while it's hot. If you want it cold, leg meat is the best since it doesn't have much fat.
QWhat is the Diffrence between "Made in Australia" and "Made in New Zealand"?
AFrom Australia, they are slaughtered at 6-8 months-old. Each part is big and has stronger flavor. From New Zealand, they are slaughtered at 4-6 months-old. It has mild flavor which is perfect for the first-timers or people who don't like lamb that much.

Awesome Lamb Roast
This lamb shoulder is the best slow roasted for at about 140 deg C for 2.5 hours. I usually turn it up a bit towards the end to its to get a bit of a crust on the outside. So good with some mint jelly (hey Meat Guy maybe you should be stocking Mint Jelly as well....?)
Its so tender and tasty. Recommended!!

Tasty and tender, could be meatier!
Delicious and tender, though a little on the small side. A luxury treat, but I'd love a little more meat on the bone!
