AFrom Australia, they are slaughtered at 6-8 months-old. Each part is big and has stronger flavor. From New Zealand, they are slaughtered at 4-6 months-old. It has mild flavor which is perfect for the first-timers or people who don't like lamb that much.

Wow these are nice!
I'm from the UK and like lamb but usually use lamb minced, in Shepherd's Pie. Went to a nice restaurant for a special occasion a couple of years ago and had lamb fillet steak. It was so good we tried it again ourselves using Meat Guy lamb fillets by pan-frying them for a few minutes each side. Works perfectly and absolutely delicious. Not cheap, so it's for a special occasion, but highly recommended.
