Beef equivalent to a ribeye roll or Cube roll. Nearly all the fat trimmed off, very tender and easy to use.
This cut is excellent roasted whole as a Prime Rib, or you can carve your own ribeye steaks. There is very little fat cover or connective tissue so there is no loss.
