Lean, tasty meat that has the bounciness of duck, but a flavor that is disturbingly close to beef (in a good way, of course). The patties cooked well on the grill and were ready quickly due to their relatively small size (100g each), but lost almost none of their mass due to the low fat content. Out of all the exotic meats we tried from the Meatguy, my 7-yera old liked this one the best, and it is probably a good "gateway meat" for those wary of anything that can't be found on Old McDonald's farm.
