Great cut of beef for a roast for 2-4 people. Cut off the bag left uncovered for one day in the fridge, 3 hours prior took out from the fridge, seared in hot pan, then added to oven, hottest it can go for less than 30 minutes until 44c in the middle, took out uncovered and left to rest as long as it cooked. Was evenly pink and amazing flavor. Fantastic cut would recommend.
