This makes a tender and easy roast, it's also perfect for pulled pork. For "real" pulled pork, slow smoke this for 4 - 6 hours, then shred it with a fork, or if you like to cheat a little, throw it a pressure cooker for 30 minutes and mix some of our powdered hickory smoke or barbecue sauce into the pulled pork.     Serious barbecuers only. This is a whole side of pork, minus the head, skin, feet, and other bits. A whole lotta porker. These weigh in at close to 25 kilos and yield enough meat to feed 50 or 60 really hungry people. Unfortunately, due to shipping restrictions, we have to cut this side in half to ship it, so the front and back will arrive in separate boxes. You can pick it up whole if you want, though. Sorry, we can't do this with skin or head on, nor can we do a whole pig that is the same size as this. We can do the full, un-split 50 kg carcass but only on special order and for pick-up. Dimensions are about 140cm X 50cm. You can also just hang this in your appartment for boxing practice. Frozen.

    The full loin. Tastes great roasted or carve your own boneless chops. Full loins can have a lot of variation in size and weight (just like pigs!). These average about 2.0 - 3.0 kg but might be much larger or smaller with an average length of around 50-55 cm. It is possible to partially thaw, cut into smaller sized portions, and refreeze. Provided you don't let the meat sit at room temperature for more than a few minutes there should be no food safety issues. Frozen.

These are of the quality grade known as "table meat" which means it's meant to be cooked and consumed as oposed to "manufacturing meat" which goes is used for grinding or curing. Not that you can't cure it yourself, making your own bacon can be lots of tasty, tasty fun and this is what you should start with. This specification is called "single rib" because it still has the rib meat attached. A whole pork belly can make an excellent conversation piece for your coffee table.     We have teamed up with the hirata farm up in the Yamagata prefecture of Japan to bring you one of the best pork that Japan has to offer. This pork is called Sangenton (the iberico pork of Japan if you like) which is a mix of the American landrace, the British berkshire pork and the duroc hog. It is prized for juiciness, flavour and tenderness. It is pink-hued and heavily marbled. It's high fat content makes it suitable for slow cooking. Frozen.
