塩漬け熟成させてから中温半日スモークしてベーコンを作っています。保存がきくうえ、大変おいしく、脂も少なめで重宝しています。
Fantastic
I've made this 3 or 4 times now. An absolutely delicious roast slow smoked in a kamado. Combine with Robuchon's mashed potatoes for a trip to heaven.

最初の出会いは楽天市場のミートガイ。訳あり肉５ｋｇ詰め合わせにゴロリと入っていたこのお肉でした。いつもの手順で焼き上げましたが、実においしかった。
臭いなど多少の個体差はありますが、失敗はないです。
ちなみに楽天よりもコチラの直営サイトが2割以上格安です。

We bribed it then stuffed it with apple and garlic. Slow cooked it for 4 hours came it great
