In the case of spare ribs, the muscle is the milky white membrane that connects the bone to the meat. There are also muscle fibers between the fat and the lean meat, which are less visible. Before cooking, pierce the meat in several places with a fork or knife and cut these muscle fibers.
2. Use the power of enzymes and pH
To tenderize meat, use the enzymes contained in raw vegetables, fresh fruit, and salt koji, as well as the pH (acid) of yogurt, vinegar, tomatoes, etc.
