As the name suggests, grass-fed beef is meat that comes from cattle that's been raised on a grass-only diet. They can graze freely, which gives their muscles a good amount of exercise, while keeping their stress levels low. Grass-fed beef is known to be packed with red meat and have a meatier flavor.
Most of the beef that can be found at the local supermarkets in Japan are grain-fed. Meat from this type of cattle is known to have more marbling/fat.
