Natural venison (benison) raised by roaming the vast nature of Tsushima, Nagasaki Prefecture, sur-rounded by rich forests and seas.
Among these, we deliver the rare "fillet (tenderloin)" cut, of which only a small amount can be obtained from one deer, as two luxurious blocks weighing 240g (120g x 2).
Smooth, tender meat
The fillet is the least used muscle in venison and is characterized by its extreme tenderness.
You can enjoy its tenderness, which allows a knife to slice through easily, and the elegant umami of the lean meat that overflows with each bite.
It is high in protein, low in fat, and rich in iron, making it very popular among health-conscious individuals.
Processing by skilled "Matagi" hunters
Many of you may be concerned that "gibier might have a gamey smell."
This product is directly sourced from professional "Matagi" hunters who practice traditional hunting in Tsushima.
By quickly bleeding and properly processing the deer after capture, the distinctive gamey smell is elim-inated.
Only the pure umami of the meat, a blessing from the forest, is condensed. Even gibier beginners can enjoy it with peace of mind!
How to enjoy
Medallion Steak
Cut the block into thick slices of about 3-4 cm, sprinkle with salt, and then place them in a hot frying pan with oil.
Once the surface is nicely browned over medium to high heat, wrap it in aluminum foil and let it rest for a while to allow the residual heat to cook it thoroughly.
You can add pepper after grilling, if you like.
We recommend serving it with a sweet and sour red wine or berry sauce, or simply with wasabi soy sauce.
Luxurious Venison Fillet Cutlets
If you want to maximize the potential of the tender fillet, cutlets are recommended.
Season with salt and pepper, coat with breadcrumbs, and quickly deep-fry in hot oil.
The juicy lean meat encased in the crispy coating offers a light and elegant flavor that is different from pork or beef fillet cutlets.
Roast Venison
Sear the surface of the block thoroughly and then slowly cook it in a low-temperature oven.
After roasting, slice thinly and serve as a topping for salads or as a main course appetizer for entertaining guests.

THAWING
Thaw frozen products slowly at low temperatures.
If thawing in ice water, the recommended time-length is about 4 hours per kg.
If thawing in the refrigerator, it takes about 24 hours per kg.
You can thaw it while in the package, but the package may open during thawing, causing leakage, so we recommend double-bagging or thawing on a tray or bowl.
