This product is a carefully selected gem directly sourced from local Tsushima "matagi" (hunters) who know the mountains of Tsushima inside and out.
For wild game meat (gibier), quick and precise bleeding and processing after capture significantly affect the taste.
Because it is processed quickly and appropriately with skilled techniques, there is surprisingly no "gaminess" peculiar to wild boar meat, allowing you to enjoy only the clear umami and wild aroma of the meat.

Characteristics of Shoulder Loin
The shoulder loin is the part of the meat from the neck to the back, which is frequently moved.
It contains an appropriate amount of the unique, smooth wild boar fat (white meat) within the red meat, making it a very popular cut where you can enjoy especially "rich umami" and "deepコク" among wild boar meats.
Despite its firm meat texture, the fat melts when cooked, resulting in a juicy finish.

Delivered as convenient "slices" and vacuum-frozen to lock in freshness.
With a serving size of 200g (approx. 1-2 servings), it's perfect for classic botan nabe (wild boar hot pot), yakiniku (grilled meat), or a slightly more elaborate BBQ.

How to enjoy

Simply grilled with salt and pepper
First, to enjoy the natural flavor of the ingredients, quickly grill it on a heated frying pan or griddle, and season with salt and freshly ground black pepper. You'll be surprised by the rich sweetness of the fat.

Simmer in a red miso or blended miso-based broth with plenty of root vegetables and mushrooms.

  • Sufficient heating to the center is required: As this is natural wild meat, to prevent the risk of parasites and hepatitis E virus, never consume raw and ensure it is thoroughly cooked to the center (target internal temperature of 75°C for at least 1 minute).

THAWING

Thaw frozen products slowly at low temperatures.
If thawing in ice water, the recommended time-length is about 4 hours per kg.
If thawing in the refrigerator, it takes about 24 hours per kg.
You can thaw it while in the package, but the package may open during thawing, causing leakage, so we recommend double-bagging or thawing on a tray or bowl.
