Welsh Lamb
◆High-quality grass and gentle hills It's said 80% of the land in Wales is suitable for stockbreeding, called permanent grassland. They've been raising lamb/sheep in the great nature for many centuries. They don't feed grain. Instead, they feed ryegrass, white clover, chicory, plantain, and etc. mainly grass with so much of their kodawari. Based on the blessings of nature and sustainable agriculture, they do not use pesticides or synthetic fertilizers, and they raise lambs in a relaxed, stress-free environment of the lush hills with gentle slopes.
◆Soil rich in mineral Wales is surrounded by the ocean which rich mineral is brought to soil by the sea breeze. Also, pastures along shores or close to swamps have a unique environment for plants due to the high and low tides. Lambs that eat grass in these environments tend to have a strong flavor and be very tender. The lush hilly area with gentle slopes, mild climate, soil rich in mineral, with all of these together very delicious Welsh Lamb can be produced.
◆Spring Lamb
①Spring (best season) They are raised through spring to summer when the grass is most nutritious then slaughtered within Jul.-Sept. when they are the most flavorful. These small lambs are known for their tenderness and juiciness. ※Each year the producing timing may vary depending on how they grow.
②European Style With a long history of treating lamb as an expensive ingredient, the European chefs seek for small, juicy lambs that are 3-6 months old
③Aging They age the meat for 2 weeks after slaughtering. This allows the meat to have more umami, tenderness, less gamey taste, and etc. They quick-freeze it when the flavor is perfectly balanced with the highest quality. So, they can produce the best lamb meat.
◆Eco-Friendly The Welsh agriculture is done with considering the sustainable future. They have blended in the nature, protected the beautiful views and wild animals, and become a part of the nature for many centuries. According to the research of Bangor University
①, the world average of the greenhouse gas emission (CO²) from producing lambs is 37kg per 1kg of lamb. On the other hand for Welsh Lamb, it's 10-13kg per 1kg of lamb which is way lower than the average. The Welsh pasture with rich grass store the greenhouse gas in the soil which it plays a huge role in carbon-offset. Also, by lambs grazing around, the eco-diversity gets better and the soil becomes healthier and its structure improves.
