SERVING SUGGESTIONS

Beef Cheeks are a rather tough cut of meat. It needs to be cooked long and slow to make it tender. Cheeks absorb the flavors of braising liquid and spices well and when you cut it, it is stringy, almost like pulled pork or brisket.


We recommend cooking these in a slow cooker


1. Coat beef cheek meat with olive oil and rub salt, cumin, and pepper into meat.

2. Prepare your slow cooker with water.

3. Put meat in aluminum foil and arrange onion and garlic around it. 

4. Cook on Low, adding more water if it has evaporated until meat is very tender. This can take up to 8 hours.

繊細でもっちりと柔らかい食感

一個で一皿になるぐらいの大きな塊に切り分けて
赤ワイン煮込みを作ったつもりでしたが、
赤ワインとトマト、色々野菜、ブイヨンで圧力鍋高圧で30分
煮たら、どちらかというとビーフシチューになりました。
要するに美味しかったのですが、高圧時間もう少し短め
でも良かったかもしれません。

しっかりした筋肉感はスネ肉に似てますが、もっと繊細で
ゼラチン質が多いためか、もっちりとした食感です。
とても柔らかくて、実際にスプーンで切れる柔らかさでした。
コラーゲンと筋肉のバランスが絶妙で、初めての食材ですが
くせになりそうです。(産国によっても違うかもしれませんが)

煮る前に肉を焼く時にも、煮込み過程でもミートガイの
オリジナル ALMIGHTYスパイス を使いました。
牛肉煮込み系の料理と、このオリジナルスパイスは
とても相性が良いように思いました。
