Description

A portion of the flank, hand cut into 1kg blocks. As these are hand cut and come from a large irregular piece of meat there may be a lot of variation in size.

We love our flank meat because compared to other cuts, it's relatively inexpensive but just as flavorful. This is a lean cut with long muscle fibers, so make sure to cook and slice it the right way to avoid toughness. 

Serving Suggestion

 Cut your own steaks from this big block! Flank steak has tons of intense beefy flavor but can be a little tough. Eat it thinly sliced and cut against the grain for maximum tenderness.

    Decided to cook this in cognac with onions, carrots and potatoes on low for 6 hours in my crock pot. Very delicious, with only 1 tablespoon of fat to be skimmed off. It's a meaty meat, so the cognac gravy was the perfect compliment to this cut's rough texture.

    筋が多いので包丁で切るのが少し大変でしたが、圧力なべで筋ごと一気に柔らかくしてから豪快な大き目のぶつ切りでカレーにして食べてます。残りは小分けで冷凍しましたので10回以上はおいしいカレーが作れます。グラスフェッドなので牛脂も質が非常によく全部飲み干してます。なくなったらまた買います。
