  • Q Which Part is Striploin from?
    A Striploin is from the lower back part of cow. It has a good amount of fat and fine tender texture. It is moved decently often which makes the fine and tender texture. Since it has such a good texture, it is often cooked as steak and roast beef.
  • Q How should I Cook it?
    A Depends on how thick it is. But first we recommend slow-cook then sear on high-heat as a finish-up. Searing it on high-heat from the beginning also works and quicker. However, it easily gets tough if you overcook it. Medium-rare is the best.

Great sirloin; odd cuts
The Meat Guy's sirloin steaks are tops in flavor in my opinion, and these smaller 220 gram cuts are no exception. However, I'll echo a couple of other reviews––the nonuniform thickness of many of the steaks in the set makes it quite difficult to cook the whole steak to medium rare. The thin side becomes almost well done, while the thick side is still rare. I suppose a solution would be to slice the thin side off and cook it separately.

Nice Steaks for the price
These cooked up very nicely in the frypan. The only downside was inconsistent thickness so one was cooked mid rare the other was closer to rare. This is the cook's problem but it would help if these were cut to more consistent thicknesses. The taste was excellent and the price was fantastic. Sometimes grass fed can be a little gamey but these were really good flavor. Way higher quality than the price that was charged. So I'm very happy about these.

Always good

Suitable for home dry aging
Ordered this piece to dry-age at my home. expected to let it drying for 25 days. I did not yet tasted it, but the aging process is going well, no rotten part, I guess a great effort has been made in the packaging process to maintain high level of hygiena. The cut is well done the piece is beautiful, good balance of muscle and fat.
