  • Q What is the Difference between Lamb and Mutton?
    A Lamb is baby sheep less than one year-old, which is tender and has less gamey-flavor/aroma. Mutton is grown sheep two year-old or older, often cooked as Jingisukan(Genghis Khan) which is marinated.
  • Q Any Tips of enjoying Lamb / Mutton?
    A Melting Point of Sheep meat is high, the fat gets really tough when it is cold. So, if it is the part with a lot of fat, eat it while it's hot. If you want it cold, leg meat is the best since it doesn't have much fat.
  • Q What is the Diffrence between "Made in Australia" and "Made in New Zealand"?
    A From Australia, they are slaughtered at 6-8 months-old. Each part is big and has stronger flavor. From New Zealand, they are slaughtered at 4-6 months-old. It has mild flavor which is perfect for the first-timers or people who don't like lamb that much.

Always great quality. I fry them in a little oil with rosemary, and they’re delicious. I like them quite rare, and the flavour really stands out nicely.

Really good quality for soups and stews. I made Welsh cawl, letting with vegetables it stew on a low heat for an hour, and it became beautifully tender., falling off the bone.
