Do you know a dish called “Schnitzel”?You might be unfamiliar but it’s actually one of popular meat dishes mainly in Europe.Or you might have seen it at restaurant and you are wondering what it is.It looks very similar to “katsu/tonkatsu” in Japan but there are some differences in ingredients and cooking methods.This time, we will introduce what “schnitzel” is, its origin, regional differences, differences from katsu, and The Meat Guy Original recipes you can easily make at home!Try schnitzel, the popular dish in Europe at home. What’s Schnitzel?


Schnitzel is a cutlet that is thinly sliced and breaded then fried in oil. It is a traditional dish and has been eaten commonly in Europe especially Germany and Austria (Vienna) from old times.
Due to its simplicity, it’s often made in both households and restaurants. It’s a well-known meat dish.



Where is it from? Origin?


Schnitzel has been very common from old times and has a long history which we do not know where it exactly originated in.
However, the theory of Milanese cutlet in Italy being introduced to Austria, then having become “Viennese Schnitzel” seems the most legitimate.
The difference between Schnitzel and Milanese cutlet is… Schnitzel is breaded with normal bread crumbs. On the other hand, Milanese cutlet is breaded with bread crumbs and powdered/grated cheese.


Types of Meats

People often use pork to make schnitzel but you can use other types of meats as well.
The most famous one is Viennese Schnitzel made with veal. However, each region/household/religion uses different types of meats such as pork, chicken, beef, or even turkey.
You can enjoy the flavor of each.


German-style vs Viennese-style

Schnitzel is popular in both Germany and Austria (Vienna), geographically close together. However, there are small differences in ingredients and cooking methods.


Also, the German-style one is called “Jäger schnitzel”, the Viennese-style one is called “Wiener schnitzel”.
Both are thin cutlets that are breaded and fried. However, there are differences in types of meats, sauces, and sides.
Both have unique features and look delish!

Since schnitzel is a fry, so it actually goes perfect with alcohol. In Europe, people often enjoy schnitzel with alcohol.
For example, white wine is a staple with Wiener schnitzel or normal pork schnitzel. Crunchy/Crispy breading matches the fresh and mild taste of white wine.
On the other hand, in Germany where beer culture is huge, of course, beer is also a staple with schnitzel.

Schnitzel vs Tonkatsu


By the way, schnitzel looks almost the same as “katsu” in Japan.
However, schnitzel and katsu have slightly different features such as types of meats, cooking methods, and etc. In this part, we will introduce 4 differences between those two.


Types of Meats

Schnitzel could be veal, pork, chicken, or other meats. There are no specific rules. But katsu is often made with pork, it’s called “tonkatsu”.
Also, schnitzel is thinned well with tenderizer before cooking. But katsu doesn’t get thinned that much.


Breading

Schnitzel is breaded with normal bread crumbs while katsu is breaded with panko.This makes katsu more crispy/crunchy/flaky than schnitzel.


Cooking Methods

Schnitzel is fried on a frying pan but katsu is deep-fried.


Sauce / Sides

Schnitzel is often served with different kinds of mushrooms, tomato sauce, or lemon. However, katsu is usually served with Worcestershire sauce and shredded cabbage as side.
Katsu has a default cooking method with less variations for sauces and sides. On the other hand, schnitzel has a basic recipe plus you can serve it with many different types of sauces or sides to make your original recipes.


The Meat Guy Schnitzel

We have explained what schnitzel is, now we want you all to enjoy it at home. So, we are introducing The Meat Guy Schnitzel Recipe! This time, we use the ingredients that you can get easily in Japan to make pork schnitzel.

◆How to make schnitzel



◆Schnitzel Ingredients (2 persons) 
・Pork loin: 150g x 2 pc
・Bread crumbs: 100g
・Cake flour: 4 tbsp
・Egg: 1
・Salt: a pinch
・Pepper: a pinch


①Cover pork loin with parchment paper or plastic wrap and pound it with a tenderizer or something a bit heavy to thin the meat.Make sure to pound it thoroughly till it’s thinned completely.


②Salt/pepper the meat.
 Coat it with cake flour lightly, dip it completely into beaten egg, then coat it with bread crumbs.Shake off any excess for the best result.

③Put vegetable oil into a frying pan. Fry the meat(about 180℃).
 3-5 min on medium, check the color and flip it every minute. The best amount of oil is as much as the meat is about half way soaked.

④Once the inside is cooked, it’s done.
Have it with cut lemons and lemon butter sauce(refer to the following recipe).

Schnitzel already tastes good. But you can make it even better with one small touch. Here’s the recipe of Original Lemon Butter Sauce.This sauce tastes fresh and deep which harmonizes perfectly with schnitzel!


◆Lemon Butter Sauce - Ingredients
・Lemon: 1
・Butter: 100g
・Salt: 2 tsp
・Black pepper: a pinch
・Parsley: a pinch

①Put all the butter into a heated frying pan.
②Set the heat on low once the butter sizzles. Add lemon juice, salt, and black pepper.Mix them well, check the taste then sprinkle parsley. It’s done.
