"Spare Ribs" - the main stream that you often see at supermarket in Japan vs. "Back Ribs" that are very popular outside of Japan.What's the difference between those two? We will tell you the differences of each.
Back Ribs vs. Spare Ribs
Ribs are very common as BBQ food. You often see them grilled and covered with BBQ sauce in the U.S.. "Spare Ribs" are close to the belly which has more fat. In Japan, this one is more common. On the other hand, "Back Ribs" are close to the back bone which has less fat. It's pretty common in the U.S.. It's hard to get "Back Ribs" in Japan.
What are "Baby Back Ribs?"
Comparing to "Spare Ribs" close to the belly, "Back Ribs" close to the back bone are smaller. That's why they're called "Baby" Back Ribs.In Japan, butchers typically get rid of the bones and sell them as "ro-su" for tonkatsu. That's why you don't see Back Ribs much.Pork Loin part with bones is tender. And it will be even more tender if you do Low & Slow.
Where Can I Find Back Ribs?
The ones you mainly see at supermarket are "Spare Ribs" which is the belly side. We, The Meat Guy sell "Back Ribs" closer to the back bone which is hard to get in Japan. Let's enjoy the REAL BBQ with Back Ribs!
How to Cook Back Ribs
◆Roasted Back Ribs (Toaster Oven)
【INGREDIENTS】
・Pork Back Ribs: 1 Rack
・The Meat Guy Original BBQ Sauce: Preference
・Salt: a little
【DIRECTIONS】
②Sprinkle salt evenly.
③Place back ribs on aluminum in oven, then roast at (around) 1000W for 15min.
④Take the ribs out, spread BBQ sauce thoroughly, then roast for 15min. again.
⑤Take them out again. Spread BBQ sauce, and roast for 10-15min. making sure they don't get burned. DONE!
◆Slow-Cooked Back Ribs (Frying Pan)
・Pork Back Ribs: 1 Rack
・The Meat Guy Original BBQ Sauce: 250g
・Beer: 1 can (350ml)
・Salt: a little
【DIRECTIONS】
①After thawing, cut along each bone with a knife or scissors.
②Sprinkle salt evenly.
③Spread oil on a frying pan and brown the ribs at medium heat.
④Once it's brown completely, add all the beer and 2/3 of BBQ sauce.
⑤When it b+C18:C20d.
⑥Once the moisture is gone and sauce gets thicker, it's DONE!
◆Dry Ribs (Frying pan)
【DIRECTIONS】
①Thaw back ribs.
②Put them in a large pot with a lid on then steam at medium heat for 30 min. (If you don't have a large pot, you can cut each rib to fit in)
③Cool off the heat.
④Once it's cooled off, deep fry at 170~180℃.
⑤We recommend either skinny-dipping them in oil or coat them with starch. (It'll get crispy with starch)
⑥Sprinkle coarse ground salt/pepper then it's DONE.
You can also dip them in wing sauce, use the spice that comes with the SET, or even by itself!
