Usually all of the turkey festivities happen during Thanksgiving and it seems a bit rare to enjoy a turkey on Christmas that isn’t leftovers, but this year, let’s strive for something new! We’d like to introduce several turkey-based recipes for this Christmas season that include turkey breasts and even turkey legs!
Points to Preparing Delicious Turkey
We’re sure your image of a turkey is just a really big chicken with a bit of holiday flavor. In terms of preparation and cooking, we could agree with you! When actually cooking the two, you’ll see that the effort to make something delicious isn’t quite that different. Turkey has less fat and is generally healthier than chicken, but can be known to be a bit dry at times. With the recipes below including Saumur Solution, we’re going to show you how to make juicy delicious meals that’ll have you sweating for turkey every Christmas season from now on!

Not only are the recipes that we’re going to show you today relatively easy, they’re actually quite delicious! Simply follow our steps one by one and just about anyone can make a superb Christmas meal.
Stuffed Turkey Breast
Here at The Meat Guy, we get a lot of inquiries concerning whole turkeys and how they won’t fit into ovens, freezers, etc. With that thought in mind, we’ll be introducing turkey recipes that use our processed turkey meat and not a whole turkey that you’d have to worry about where you’ll store for later. This one will also look great with all the holiday features such as stuffing and even cooking string!
- <Ingredients>( For 5-7 People)

Turkey Breast(700g)
【Saumur Solution】
◆ Water 100cc
◆ salt 10g
◆ Sugar 5g
◆ If you like herbs such as rosemary and bay leaf (not necessary)【Stuffing】
★ 1 bread or 80g cooked rice
★ Spinach 1/2 bag
★ 1 egg
★ 3 tablespoons walnuts
★ 3 tablespoons raisins
★ 1/3 teaspoon salt
★ Some of your favorite herbs
★ Octopus thread about 1m
- <How to Make>

1. After thawing for a day in your refrigerator, use a kitchen knife to open it. From the thin edge of the breast insert the knife and make a cut to the thicker end leaving about 2cm’s uncut.
2. Use another sealed bag or container to submerse the meat in the Saumur solution for 24 hours. This well ensure that the meat stays juicy.
3. Cut the spinach to lengths of about 2cm and boil. Place the ingredients in the bowl and mix them together. Place the turkey opened on top of the wrap with the peeled side down and spread the filling evenly. If you put too much on the edge, the padding will stick out, so don't put it on the edge of 1 side of the 4 sides.
4. Use the wrap to help roll the piece together and the cooking thread to hold it together once rolled. From there you can season with salt and pepper. It’s kind of like making sushi only on a large scale with turkey breast as a substitute to sashimi!
5. Preheat your oven to 190℃ and bake for about an hour. After removing from the oven, firmly cover the meat with aluminum foil to keep it warm. After 20 minutes of rest, cut and plate!
When it comes to stuffing, there isn’t one true way to make it. You can change many of the ingredients such as raisins to dried figs or cranberries. It all depends on the tongue of the eater!
Grilled Turkey Leg
Check out this turkey Recipe! Grandma always made the best turkey legs using the oven! You’d be surprised at how easy it is. You can even add a bit of Christmas flair just like we have by adding a ribbon/bow to the handle of the leg after wrapping it in aluminum foil of course. These also make for perfect Instagram posts!

Carrots, potatoes, broccoli, etc.
- <How to Make>

1. We recommend thawing for one full day in the refrigerator. After that, take all the above-mentioned ingredients to a sealed container or bag and let them rest in the refrigerator for one more night.
2. Place the turkey leg in an oven ready pan like we have shown below and add your favorite largely cut vegetables. Preheat your oven to 190 degrees and bake for 40- 50 minutes. With a few skewers, poke a few holes and if a clear soup is produced, you’re done! You can also use those skewers for the vegetables as well. If the meat looks a bit undercooked, don’t be afraid to pop it back in the oven for a little bit longer. (about 10 minutes).
You can also make gravy! Gravy and garnished vegetables are the best with turkey. This is why we highly encourage using Saumur solution to keep the meat nice and juicy.
Juicy Holo Holo Slow Cooking Recommendation
Turkey Confit usually describes a difficult to prepare meal that involves slow cooking with high amounts of oil. However, using a low temperature slow cooker can make things much easier, quite convenient! Maybe you should consider asking Santa for a low temperature for Christmas? A little early planning for the next holiday perhaps?
- <Ingredients >(For 3-4 People)

・Turkey Leg(700g)
★ salt 9g
★ Sugar 9g
★ Rosemary and Laurier black pepper a little
・3 tablespoons olive oil
- <How to Make>

1. Place all of the above-mentioned ingredients into a sealed bag and allow them to rest overnight.
2. After wiping off the surface of herbs and moisture with kitchen paper, pour olive oil in a sealed bag along with the turkey meat. You’ll want to keep as much air out of the bag as possible.
3. Preheat the low temperature cooker to 80 °C and cook at low temperature for 3 hours.
4. After cooking at a low temperature, you can give it a bit of color with a frying pan.
Usually Confit describes a dish made with a bit of an amount of oil, however with a slow cooker you can achieve some of the same flavors while using less fat in your meal! Enjoying soft Holo Holo turkey just got easier!
