Christmas special recipe! Roast chicken for Christmas!

A Christmas dinner, just like the ones that you see on all of your favorite Christmas holiday movies. Doesn’t that sound fun? What about with a whole roasted chicken? Preparing an entire chicken does seem like a lot of work, but The Meat Guy is here to show you that it’s actually quite simple and that you can make this year’s Christmas a special one with meat!

There are plenty of Christmas recipes that involve using stuffing however, if cooked improperly the chances of food poisoning are higher and thus to combat that we will only introduce recipes that do not involve preparing stuffing.

【Saumur Solution】
★Water 200
★salt 10g
★Sugar 10g
★If you like herbs such as rosemary and bay leaf (not necessary)
【Garnishing Vegetables】
1 to 2 carrots, potatoes, sweet potatoes, etc.
- <How to Make!>

1.As always, you must begin with the thawing of the bird. If you plan to thaw in the refrigerator, it will take up to 2 days to thaw. With a turkey of the same size and using cold water thawing as your preferred thawing method, it will take about 4 hours to thaw. With running water thawing, it can take about 3 – 4 hours. We recommend slow thawing in the refrigerator for the tastiest turkey. The quicker the thawing, the bigger potential for quality loss.
2. Lightly rinse the surface and inside of the chicken with water and place the ★’ed ingredients and the chicken in a large plastic bag, and deflate the air. Then, tightly tie the opening with a rubber band to prevent the Saumur liquid from leaking. Leave it in the refrigerator for 3 hours to 1 day and then add seasoning.
3. Remove the seasoned whole chicken from the bag and place it on a deep oven tray made of iron plate or aluminum and leave it at room temperature for 1-2 hours.
4. Apply olive oil to the surface of the whole chicken. Lightly season with salt and pepper and wrap the entire chicken in aluminum foil. Next, heat it for one our in an oven preheated to 190℃.
5. You’ll want to go ahead and cut your preferred vegetables here. Remove the chicken from the oven and remove the aluminum foil. Place your vegetables around the chicken and for another 40 minutes heat them at 220℃.
6. After cooking, with a kitchen knife, check and see if the center of the breast is properly cooked through. If there are no issues here, return it to the oven on low heat and simply keep it warm until it’s ready for eating.
When it comes to separating the chicken, we recommend using kitchen scissors. When carving pieces to eat off we recommend using a kitchen knife.
Perfect for Chicken! Preparing the Dipping Sauce!
We already know that just with the turkey itself, its already a party. However, depending on the amount of people, you might have a bit of chicken left over. Here’s what to do with that leftover meat!
Sweet and Sour Onion
Chop long leeks and mix grated ginger with soy sauce and sesame oil. This has a rich taste that resembles the refreshing Chinese style.
Honey Mustard
Mix 3 tablespoons of mayonnaise, 1 tablespoon of honey, and 1 tablespoon of grain mustard and a teaspoon of soy sauce. Honey mustard and chicken is a classic combination that entices you to keep going back for more!
BBQ Sauce
Grate 1/4 of an onion, 1/4 of an apple, 1 head of garlic. Heat these ingredients with (80ml) of water, tomato ketchup, Worcestershire Sauce, soy sauce, and vinegar all at about (1 tablespoon). You could also try The Meat Guy’s BBQ sauce for a different American flavor.

Even with all of these sauce options, you might not have enough room to finish off the chicken all at once. Instead of just sauce, why not make another dish? Chicken is very versatile and just like the great Meat Guy himself once said, “you can’t go wrong with chicken”. Here are 3 leftover chicken recipes to help handle that leftover meat!
Chicken Gratin
Simply place steamed potatoes and bone-free chicken on a baking dish, topped with white sauce and melted cheese, and heat in an oven until it is baked. You can also add some of your own favorite vegetables to the mix! We used pumpkin and broccoli.
Chicken Soup
This one’s easy! Separate a bit of chicken meat from the bones and boil the bones for an hour. That’s it! You now have chicken stock to add your favorite vegetables and chicken meat.
Rice Cooker Pilaf
Dice one whole onion and 1/3 of a carrot. With 1 tablespoon of butter fry the two on medium heat. Once you’ve cleaned your rice, add it to the rice cooker along with the vegetables and the juice left behind from the fry. Add chicken, consommé (1 teaspoon), salt (1/4 teaspoon), and pepper. Cook and plate. You can also decorate with parsley.
