Powdered Hickory Smoke: Basic Usage and Simple Recipes

If you’ve ever tried making smoked recipes, then you’ll know how much of a hassle it can be. From prepping, to cooking, to cleaning up, it really requires a lot of work! Of course, that might be part of the appeal for some people... but if you’re one of the many who just want to enjoy the flavor without all the fuss, then this article is for you!

The Meat Guy offers a wide variety of herbs & spices. One of those is the “hickory smoke powder.” With this powder, you can make any dish taste as rich as if it had been smoked the traditional way. If you’re unfamiliar with this, we will show you basic ways to use it, as well as some simple recipes you can try out.

Hickory Smoke Powder?

Hickory smoke powder is a simple seasoning that can bring a smokey flavor to your dishes. If you’ve tried smoking meats before but have failed and given up on it... this one’s for you! Just a sprinkle of this powder can make it seem like you put in all that work!

If you don’t know already, "hickory" is a tree of the walnut family native to the United States. It is a type of wood usually used in smoking food. Hickory smoke powder is a powder that contains the scent of smoked hickory. Therefore, even just a small amount will have that great aroma and will last for a while.

Just a Little Dash to Make Your Dishes Smokey!

Basic usage for this spice is fairly straightforward. Just sprinkle it onto your dish. Of course, you would probably have to test it out first before applying it to your dishes to gauge the level of smokiness you like. After you get a handle on the flavor, you can use it to make just about any dish smokey! Steaks, roast beef, sausages, fish... the possibilities are endless!

Here’s a genius hack: make some “smoked salt”. That’s great for when you want a hint of smokiness on your steak, but without it being too overpowering.
Just mix 1/3 teaspoon of hickory powder for every 20g of salt. If you want to use just the powder on meat, we recommend using about 2g of powder for every 1 kg of meat. Of course, you can adjust this amount to your liking.

Another genius combo? Hickory powder + yakiniku sauce, or hickory powder + mayonnaise. Really, any sauce or condiment that you want to make smokey.

We recommend a ratio of 20:1. So if it’s mayonnaise, then for every 20 parts of mayonnaise, add 1 part hickory smoke powder. This also works for marinades, by the way.

3 Meat Recipe Recommendations Using Hickory Smoke Powder

So now that you have a couple ideas for how to use this awesome seasoning, let’s get to cooking! Here are some simple recipes to try out.

Smokey Rillettes

Smokey Rillettes

Rillettes is a sort of meat spread in which pork belly is slowly cooked with herbs and spices, shredded, and then allowed to firm up again. It’s usually spread on a slice of baguette but can also be enjoyed on top of some warm rice! Hickory powder adds a nice, smokey aroma to the dish, making it perfect for pairing with wine or beer!

<INGREDIENTS>(easy to make amount)
  • pork belly block 300g
  • onion 1 piece
  • garlic 1 clove
  • salt 1/3 tsp
  • white wine 100 ml
  • hickory powder 1/2 tsp

<DIRECTIONS>
  • 1. Cut off the hard part of the garlic, peel, then crush. Cut the pork belly into 2 cm squares. Slice the onion.
  • 2. Place the garlic and pork belly in a pan and cook over medium heat. Once the garlic is aromatic, add the onions and continue cooking until the onions are tender.
  • 3. Add white wine and water just enough to cover the ingredients, then cover the pan, bring to a boil, and then remove the foam.
  • 4. Cover and simmer for about 2 hours or until the pork is tender.
  • 5. Shred the pork using a fork (or use a hand blender to make a paste,) then continue to simmer until the water evaporates.
  • 6. Season with salt and hickory powder, then mix well. Transfer to a ramekin or dish.
  • 7. Let it cool before chilling in the refrigerator for at least 1 day. Done!

Looking for that familiar comfort that only carbs can provide? Look no further. Who needs warm hugs when you got bacon x hickory powder...

<INGREDIENTS>(2 servings)
  • medium potatoes 2 pcs.
  • bacon block 100g
  • onion 1/4
  • grain mustard 1 tbsp
  • hickory powder 1/3 tsp
  • salt 1/3 tsp
  • black pepper to taste

<DIRECTIONS>
  • 1. Carefully wash the potatoes with the skin on, wrap them in wet kitchen paper and plastic wrap and heat in the microwave at 500-600W for about 7 minutes. To check if they’re cooked, stick a bamboo skewer in the potatoes. If it passes through smoothly, they’re ready.(alternatively, you can be boil or steam the potatoes)

  • 2. While still hot, peel the potatoes and mash them up.
  • 3. Cut the bacon into 1.5 cm squares, heat olive oil in a pan, and start frying the bacon over medium heat until browned. Chop the onions, turn the heat off, and mix with the bacon in the pan.
  • 4. Add the potatoes in the pan with the bacon and onions, then mix in the mustard, hickory powder, and salt. Add pepper to taste.
  • 5. Add some Italian parsley for color if you like.

Keema Curry

This curry will taste like you spent hours in the kitchen smoking some meats… when really, it’s all just hickory powder! Use your favorite type of meat or blend of ground meat and enjoy this deliciously aromatic dish! For this recipe, we used ground meat.

<INGREDIENTS>(2 servings)
  • ground meat(chicken & pork blend, or beef & pork blend recommended) 200g
  • chopped onion 1/2個
  • canned cut tomatoes 100g
  • minced garlic 1 clove
  • grated ginger 1/2 tsp
  • olive oil 1 tsp
  • salt 1/2 tsp
  • hickory powder 1/3 tsp
  • plain yoghurt 2 tbsp
  • -cumin powder, turmeric powder, coriander powder 1/2 tsp each
  • -chili pepper, black pepper to taste (increase chili pepper if you want it to be spicier)
  • rice 2 servings

<DIRECTIONS>
  • 1. Heat the olive oil in a frying pan, then start frying the garlic, onions, and ginger over medium heat for about 10 minutes or until caramelized.
  • 2. Add the cut tomatoes and cook until the moisture has evaporated. Lower the heat, and add the cumin, turmeric, coriander, and salt, then mix well.
  • 3. Add the minced meat and stir fry over medium heat while loosening the meat well. Once the meat is browned, mix in the yoghurt, hickory powder, and chili powder. Adjust the level of spiciness as you like and season with black pepper to taste. Turn the heat off, and it’s done!
  • 4. Serve with some warm rice and add a fried egg on top if you like.
