One of our best-selling wild meats is the crocodile claw! Part of the claw has already been skinned to reveal the meat, but we made sure to leave just enough on so you’re reminded of what you’re eating. From first-glance, you might think that this will be crunchy and tough, but it’s actually got a pretty refreshing and moist flavor reminiscent of chicken meat. It doesn’t have the strongest flavor, but a simple sprinkle of salt & pepper may be enough for some. Here are a couple of other recipes to get the juices flowing!

Combine Crocodile Claw (1pc-250g), olive oil (2 tbsp), salt (1/3 tsp), rosemary (just a little), black pepper (to taste), sliced garlic (1 clove) in a sealed bag and shake it up. Place it in the refrigerator and let sit for about 1 hour to half a day. When it’s ready, heat a frying pan over medium heat and fry the croc claw with 3 cloves of garlic. Once some color develops on the surface of the claw, we recommend covering the pan with a lid to finish cooking the meat through.

Start off by seasoning the croc meat with some salt (about 1/3 tsp). Lightly coat the claw with flour. Add 1 tbsp of olive oil to a frying pan and heat over low to medium heat. Cook the claw in the pan until the center is well cooked. Wipe off the excess oil, then add soy sauce (1 tbsp), powdered mustard (1 tbsp), honey (2 tsp) to the pan and simmer. Voila! Honey Mustard Croc Claws for the win!

Start off by seasoning the croc meat with some salt (about 1/3 tsp). Lightly coat the croc claw with starch. On a frying pan, add sesame oil (1 tbsp) and heat. Cook the croc meat through over low to medium heat. To the pan, add gochujang (1 tbsp), soy sauce (1 tbsp), honey (1/2 tsp) and simmer. Transfer to a plate and top with white sesame seeds and chopped spring onions. Enjoy!

This recipe is so simple! All you got to do is thread 4-5 cubes of spiced camel meat through the bamboo skewers, coat in flour, eggs and breadcrumbs (in that order). Fry in oil that’s been heated at 180 degrees until golden-brown. Serve with a side of Worcestershire sauce, and enjoy!

In a resealable plastic bag, put kangaroo patties (200 g per pack), add chopped onions (1/4), chopped Shishito peppers (3), grated ginger (1 tsp), grated garlic (1 piece) and mix well. Add black pepper, cumin seeds, and coriander if you like. Once well incorporated, divide them into four equal parts, shape them into long strips, and cook them in a frying pan.

Start off by lightly coating ostrich cubes (250g) with some starch. Thinly slice a carrot (1/2) and onion (1/2), green peppers. Heat a frying pan with some vegetable oil. Start cooking the onion over medium heat until translucent. Add the ostrich, carrots and green peppers in there with 3 tbsp each of vinegar, soy sauce, and ketchup. Add sugar (2 tbsp) and potato starch (1/2 tbsp, dissolved in 3 tbsp of water). Stir for about 1 minute to complete!
