Three chunky rib tacks, at least a kilo, usually more. Like pork ribs, but with flavor! Also leaner. These are from real wild boars harvested in Texas.
You get 2-3 racks, wild boars, unlike domestic pigs, come in a really wide range of sizes, so some racks will be larger than others, but we try and put at least 1 kg. worth in each pack.

Wild boar meat has less fat then normal pork, to get the meat "falling off the bone" tender, you'll need to pre-cook them for longer. The best spare ribs are cooked twice, first with wet heat (braising, steaming, or simmering) to melt the collagen and soften the meat. Then with dry heat (broiling or grilling) to make a crispy crust. These should be steamed for about 45 minutes to 1 hr, then finished in the oven or on the grill.



For super spicy "wild" ribs, rub with our famous Taco and Chili Spice, then braise for one hour, baste with our awesome Naked Wing Sauce. Then finish on the grill, finally slice the ribs up, toss once more with wing sauce. BBBBWOOOOWWWW! That's the noise you will make when you eat them (that's a good noise).
