This cheese gets its name from the red Adler
(Eagle) on the Tyrolean coat of arms. It's so good it will
make you fly! Almost. Adler is a dense, nutty, sharp cheese
that tastes very similar to high-end Parmeggiano Reggiano (The region
of Tyrol extends from Southern Austria and down into Northern Italy,
thus the similarity with the famous Italian cheese). This is
a hard cheese, it can be grated or just crumbled over pasta, eaten on
it's own with full-bodied red wine, or used in cooking to add depth to
any recipe calling for cheese. It's made
from pasteurized milk from cows that grazed Apline meadows and
it is lactose free! This is one wedge cut from the wheel, we
leave the outer paper attatched so you can confirm what you are
recieving, if you notice any flecks of red on the surface of the
cheese, that's where it came from, probably better not to eat the
paper...

This cheese, like most high-quality cheeses, can be stored almost indefinitely. The taste will change over time as it continues to mature. The greatest danger is mold so always keep it wrapped tightly and if you see mold starting to develop quickly slice off the moldy portion.
