Normally, products that prominently feature old,
dead, white-guys on the label don't tend to be as remarkable as their
artwork. However, this is definitely an exception.
This hard-cheese is intensely flavorful and stout.
Andreas Hofer (cheese) can stand up to the best gruyere and
comte cheeses out there without even blushing through it's full beard
and leather pants. It is awesome on it's own, also great as
a part of a fondue. It's made from unpasteurized milk and is
lactose
free!

This cheese, like most high-quality cheeses, can be stored almost indefinitely. The taste will change over time as it continues to mature. The greatest danger is mold so always keep it wrapped tightly and if you see mold starting to develop quickly slice off the moldy portion.
