Notice: This Tiroler cheese is still ripening and because it has a higher moisture and fat content than some of our other artisinal cheeses, it requires a little preparation to enjoy. When you first open the bag you will notice an intense smell, something akin to the illegitimate offspring of sweaty gym socks and natto. This is normal, this cheese has always smelled like this. Because it is aging inside a vacuum pack (which is not ideal but we don't have a cheese cave) the enzymatic activity in the cheese is also releasing chemical compounds that give it a wet and sticky texture and, if you eat it right away, a bitter, metallic aftertaste. To get the most from this cheese remove it from the vacuum pack, unwrap the plastic, and then let it sit in your refrigerator for at least 3 or 4 hours, overnight is no too long. That will give it time to breath and allow the unsavory elements to evaporate (this might make everything in your refrigerator smell like socks). At this point, even though it still smells REALLY bad, the taste will be rich and creamy. By far, the BEST way to enjoy this cheese is melted. Use it in the same way you would a raclette and heat it over potatoes or a nice crusty bread until it bubbles and oozes. To store, wrap it in plastic wrap or wax paper. |

This cheese, like most high-quality cheeses, can be stored almost indefinitely. The taste will change over time as it continues to mature. The greatest danger is mold so always keep it wrapped tightly and if you see mold starting to develop quickly slice off the moldy portion.
