We hand make these sausages ourselves and are sure you will love them. These were inspired by a popular Moroccan style sausage that we then put our own twist to. We use real Harissa, a type of chilli paste, to flavor them. Harissa tends to vary in spiciness from bottle to bottle so there is a little variation in the heat of these sausages, but they are always tasty. If you've ever wanted to make your own sausages this is a good starting point. This a natural lamb casing on a pipe. The size is 18/20 mm, this is the size we use for our unNatural Boerewors sausages and our Maple Links. These come salted so all you have to do is rinse and then soak until soft and you are ready to stuff.
One pipe is about 4-5 meters and you can make about 2-3 kilos worth of sausages with that, depending upon how often you link.
