A big block of fancy prime rib. We select our best Australian Cube Rolls for this cut. This is perfect for a holiday roast, you can slow cook it on the grill, or cut it up for ribeye steaks. This is my recommendation for making a good oven roasted beef, this cut is tender and juicy so it is pretty forgiving if you cook it a little too long, or not quite long enough. There is a seam that runs through the middle, some call this the "flavor kernel", others just call it fat, but it is what makes this piece taste so good.

We've started offering a smaller version of our popular pork shoulder, also called a "collar" or a "Boston Butt" (don't know why they have their butt's on their shoulder's in Boston). This makes a tender and easy roast, it's also perfect for pulled pork.
For "real" pulled pork, slow smoke this for 4 - 6 hours, then shred it with a fork, or if you like to cheat a little, throw it a pressure cooker for 30 minutes and mix some of our powdered hickory smoke or barbecue sauce into the pulled pork.

Everything is hand-made at our processing plant in Nagoya, Japan. It will arrive to you frozen and pre-seasoned and all you need to do is defrost it for at least 1 day and then roast in an oven for approx. 90 min. at 180 degrees celcius. Also we highly recommend to let the roast rest for approx. 10 minutes after cooking before serving for juicier and much tender meat. Frozen.

Lean pork belly.
We work with our suppliers to find the best pork bellies in Japan. These are of the quality grade known as "table meat" which means it's meant to be cooked and consumed as opposed to "manufacturing meat" which goes is used for grinding or curing. Not that you can't cure it yourself, making your own bacon can be lots of tasty, tasty fun and this is what you should start with. This specification is called "single rib" because it still has the rib meat attached.
We make these by cutting up a whole pork belly, the pieces that come from the front-end of the pig have a bit more rib meat on them and are not quite as squarely shaped. The cuts from the tail-end have a bit more fat but are more uniform in shape. That is why regular customers may notice some variation in this product.
Pro tip: A 1 kg block of pork belly can also be added to your bath to make your skin smooth and silky.

It's not manly to use this on steaks, if you are grilling a steak, you should be able to tell if it's done just by poking at it. But for big meats, it's OK to use a thermometer. If you are cooking poultry, I highly recommend using a thermometer. This is obviously the best thermometer that you can buy in Japan. It's got a pokey end that goes inside the thing that you are cooking, and on the other end is a dial that shows you how hot it is inside the thing. It's also got some numbers on it
