We've started offering a smaller version of our popular pork shoulder, also called a "collar" or a "Boston Butt" (don't know why they have their butt's on their shoulder's in Boston). This makes a tender and easy roast, it's also perfect for pulled pork.
For "real" pulled pork, slow smoke this for 4 - 6 hours, then shred it with a fork, or if you like to cheat a little, throw it a pressure cooker for 30 minutes and mix some of our powdered hickory smoke or barbecue sauce into the pulled pork.

This little piggy went to market.
A pig roast is good fun and with these little suckling pigs, really easy. Just thaw out the pig, season with whatever you have handy and score the skin to keep it from splitting. We used a charcoal barbecue for the one pictured, we loaded up the coals and one side and put the pig on the other. The hardest part was stopping everyone from trying to check on the pig every ten minutes. This one took about 3 hours and was falling off the bone tender.

A big block of fancy prime rib. We select our best Australian Cube Rolls for this cut. This is perfect for a holiday roast, you can slow cook it on the grill, or cut it up for ribeye steaks. This is my recommendation for making a good oven roasted beef, this cut is tender and juicy so it is pretty forgiving if you cook it a little too long, or not quite long enough. There is a seam that runs through the middle, some call this the "flavor kernel", others just call it fat, but it is what makes this piece taste so good.

The only one in Japan! We take a chicken and stuff it in a duck, then we take the duck and stuff it in a turkey. We remove all the bones and liberally pack in a helping of our stuffing mix, then sew the whole thing up. The coolest centerpiece of any party.

The full loin. Tastes great roasted or carve your own boneless chops.
Full loins can have a lot of variation in size and weight (just like pigs!). These average about 3.5 - 4 kg but might be much larger or smaller with an average length of around 50-55 cm. It is possible to partially thaw, cut into smaller sized portions, and refreeze. Provided you don't let the meat sit at room temperature for more than a few minutes there should be no food safety issues.

This makes a great a roast the shank portion is off leaving only the tastiest and most tender portion. Australian lamb is also one of the most natural meats you can buy, raised on the free range, it's almost organic.
For a true "Sunday Roast Lamb", take this boneless leg, spike it with garlic, then slow roast it and serve it with mint sauce.

This is a whole topside, also called an Inside Round. The topside is good for slow cooking or pressure cooking. You can make roasts, meat for stew, or if you are adventurous, your own ground beef. Large pieces like this have a lot of variation in weight so you might get a lot more or a lot less than expected.

The Australian beef equivalent to a ribeye roll or rib roast. Nearly all the fat trimmed off, very tender and easy to use.
This cut is excellent roasted whole as a Prime Rib, or you can carve your own ribeye steaks. There is very little fat cover or connective tissue so there is no loss.
Whole muscle cuts like this have a lot of variation in size (some come from great big steers, others from little tiny heifers) and we only have a very limited ability to meet special requests concerning size. Small pieces may be only about 2 kg, large ones as big as 4 kg.
