Beef Back Ribs
The tasty meat between the bones is definitely the most robust cut of beef. These are nice big racks with small bones and lots of meat. These come from Chile and the cattle are Japanese Wagyu bred and raised down there so they are richly marbled and super juicy.

This little piggy went to market.
A pig roast is good fun and with these little suckling pigs, really easy. Just thaw out the pig, season with whatever you have handy and score the skin to keep it from splitting. We used a charcoal barbecue for the one pictured, we loaded up the coals and one side and put the pig on the other. The hardest part was stopping everyone from trying to check on the pig every ten minutes. This one took about 3 hours and was falling off the bone tender. Beer Can Chicken Holder

Half Pig
Serious barbecuers only. This is a whole side of pork, minus the head, skin, feet, and other bits. A whole lotta porker. These weigh in at close to 25 kilos and yield enough meat to feed 50 or 60 really hungry people. Unfortunately, due to shipping restrictions, we have to cut this side in half to ship it, so the front and back will arrive in separate boxes. You can pick it up whole if you want, though. Sorry, we can't do this with skin or head on, nor can we do a whole pig that is the same size as this. We can do the full, un-split 50 kg carcass but only on special order and for pick-up.
