Cheese - The second best food (after meat)

Stone Cellar Cheese, named for the centuries-old cellars that this cheese is matured in.  I still have my tasting notes from when I first tried this cheese, I tried to write down a few descriptors but finally just ended up with "fabulous freaking cheese!" This is my favorite of our Austrian varietals, it is complex with a supple mouth feel, flowery, nutty, coma-inducing richness.  Probably one of the best hard cheeses ever made.  This is one wedge cut from the wheel, we leave the outer paper attatched so you can confirm what you are recieving, if you notice any flecks of green on the surface of the cheese, that's where it came from, probably better not to eat the paper...
This cheese is made from unpasteurized milk from grass-fed cows.  It is lactose free!

Normally, products that prominently feature old, dead, white-guys on the label don't tend to be as remarkable as their artwork.  However, this is definitely an exception.  This hard-cheese is intensely flavorful and stout.  Andreas Hofer (cheese) can stand up to the best gruyere and comte cheeses out there without even blushing through it's full beard and leather pants.   It is awesome on it's own, also great as apart of a fondue.  It's made from unpasteurized milk and is lactose free!

This cheese gets its name from the red Adler (Eagle) on the Tyrolean coat of arms.  It's so good it will make you fly! Almost.  Adler is a dense, nutty, sharp cheese that tastes very similar to high-end Parmeggiano Reggiano (The region of Tyrol extends from Southern Austria and down into Northern Italy, thus the similarity with the famous Italian cheese).  This is a hard cheese, it can be grated or just crumbled over pasta, eaten on it's own with full-bodied red wine, or used in cooking to add depth to any recipe calling for cheese.  It's made from pasteurized milk from cows that grazed Apline meadows and it is lactose free!  This is one wedge cut from the wheel, we leave the outer paper attatched so you can confirm what you are recieving, if you notice any flecks of red on the surface of the cheese, that's where it came from, probably better not to eat the paper...

When I saw this in one of our supplier's catalogs I suddenly got nostalgic for Cheez Whiz. Unfortunately, popping open one of these jars does not instantly turn you into a stumbling college freshman with a metabolism suited for living off nothing but beer and nachos. It tastes OK on macaroni, you can come up with a pretty good approximation of convenience store nachos, but you're stomach will hate you for ingesting this stuff.
